I don't know where people are getting this shit about not eating red meat. Red meat is fine. Just don't eat a pound of it a week and you'll be fine.

Even if you throw out all of the studies on red meat, as some of them are probably bullshit, I personally get headaches and feel heavier when I eat too much red meat as opposed to white meat. I have a burger now and then, but I've been much happier and healthier since I cut it out of my daily diet. So to each their own.

It's fine to make mac & cheese as long as you make it with skim milk and fake butter, and have the willpower to make it two meals. That last part is the reason I stopped making mac & cheese when I started trying to lose weight.

Seriously. It's so hard to not eat an entire box of it, especially if it's some Kraft.

Anyway, making a great chicken breast is easier than jobbing to Ryback. Here's how I do it:

If fresh, skip down. If frozen, thaw out completely (about 20-30 minutes in warm-hot RUNNING water will do it).
Let it sit at room temperature for a bit. While this is happening, pre-heat your oven to about 400 degrees F.
Take your seasonings and rub it in on both sides (which is something else you should consider when putting together your grocery list). I personally use some thyme, black pepper, garlic and onion salts, and poultry seasoning to tie it all together.
Take your sautee pan and get it going to a medium-high heat. Add the oil while it's heating and NOT while it's already hot, ESPECIALLY if your oil is a bit cold. I personally use peanut oil because it has a high smoke point and it doesn't overpower the other flavors like other oils do.
Sear on both sides for a good 3 minutes each. You're only doing one turn to preserve the flavor. After this, I like to take my tongs and give the untouched portions a good 15-30 second sear just to get the color going.
Put your chicken on a baking sheet and roast it in the oven for 10 minutes. After that, let it rest for a few minutes; letting meat rest lets the juices settle and prevents them from hemorrhaging out when you slice into it.
PROTIP: according to temperature, chicken is done when the internal temperature is 165 degrees F. In terms of appearance, there should be no pink in the middle. It should be nice and brown on the outside, and white on the inside. Just like my ideal woman.

I literally know nothing about seasoning.

What I used to do is just cut off the fat and throw it into a George Foreman for a few minutes.

It's not hard, it just takes a little time.

I'd try to avoid processed foods as best you can, though that's not easy task. It's all empty calories. Wood pulp in your Kraft Mac & Cheese, yum!

I concur re: processed foods. Watch "Fat Sick & Nearly Dead" on Youtube or Netflix and hopefully it'll inspire you to get a juicer. It's a great way to get a lot of nutrition and vegetables into your diet, and the influx of nutrients burns off a lot of fat. I've made zero changes to my diet (still eat my share of junk/fast food, exercise 3-4 days a week, etc) and have lost 20 pounds in about a month since I bought my juicer and actually have abs again. I have a Breville Juice Fountain, but you can get a Jack LaLanne juicer at Walmart for like $90. Lots of great recipes here.

I made a few other recommendations in Joe Cadena's "I'm a vegan" thread in the general forum too.

And again, I can't understand how anyone can eat that processed mac n cheese in a box -- it is ridiculously easy to make fresh (well, mostly fresh, I use the boxed pasta) and tastes a million times better and cheesier.

I did watch that film. I tried one of the recommended juices and it was the nastiest thing I've ever put into my mouth. I couldn't do that.

Ah well, guess it's an acquired taste, because I love it. Grow it fresh in my backyard and the 'Mean Green' juice is a daily staple at this point. Spinach is a decent substitute.

If you're looking for a cheap vegetable outlet, you can always get V8 Fusion. It's what I do. No HFCS or any bullshit added, just fruit and vegetables.

EDIT: Matt, maybe you should start with the baby steps. Try making this scrambled eggs recipe. It's fucking good. Just use sour cream rather than creme fraiche unless you can find that where you live.

V8 kind of falls into the 'processed foods' region. The pasteurization process basically saps 90% of the nutritional value from the veg juice and you're left with empty calories. The better alternative is (as someone else suggested) a nice big salad.

Brown rice is a great source of complex carbs, which will keep you subsisted for longer and generally are better for you compared to simple carbs. The best way to cook it is by steaming it:

This recipe is for one cup of rice. I buy jasmine brown rice, so I rinse mine beforehand for about 30 minutes or until the water isn't as opaque when you're rinsing away. Then I leave it to soak for another 30 minutes. I don't have a rice cooker, so I just use a regular pot. Drain out as much water as you can and then add 1.5 cups of water. Set it on the heat. When the water starts boiling, reduce the heat to a simmer and let cook for 20 minutes. Afterwards, let it sit for another 10 minutes. Lastly, fluff it up with a fork.

Protip: season the water so you don't end up with bland rice. Brown rice is typically chewier than white rice, so don't think you've overcooked it once you're done.
